Ingredients:
For each "pizza"
- 1 flatbread (I used Trader Joe's brand)
- about 1/3 cup chopped chicken (I used rotisserie from the grocery store)
- 1 Tablespoon BBQ sauce
- 1/3 - 1/2 cup shredded low-fat cheddar cheese
- 1-2 Tablespoons red bell pepper, diced (optional)
- 1-2 Tablespoons red onions, sliced finely (optional)
- Sprinkle of fresh cilantro, chopped
Preheat oven to 400 degrees.
Spread flatbread with BBQ sauce. Then sprinkle on chicken, peppers, and onions. Top with cheese. Bake for 10-15 minutes until crust is crispy and cheese is bubbly. Remove from oven, sprinkle with cilantro and serve!
