"Cake Balls"

I used too much almond bark per cake ball and also made my cake balls a little too big - learn from my mistakes: make the cake balls about the size of candy buckeyes and go light on the almond bark.  I tried to make "cake pops" by putting popsickle sticks in them; but, again my cake balls were too big for this to work out.  (See the photos, LOL) Enjoy!

How To Make Them:
1)      Make a chocolate cake (I used Devil’s Food Cake)
2)      Let the cake cool
3)      Use a fork and break up the cake (I did this in a big bowl to avoid spilling cake on the floor)
4)      Mix in some frosting.  Use about a ½ a can of your favorite frosting.  Add in mini chocolate chips.   I think this helps hold the cake ball together and makes them taste very rich.
5)      Roll into balls (be sure to pack them kind of tight).
6)      Drizzle almond bark over them (I used a spoon and a mini spatula for this).
7)      Then add sprinkles or other candy decoration and let them cool on wax paper.

Pre-Almond Bark: please note that the 2nd one from the left in the top row is close to the correct size :)
Some of mine finished; I used vanilla almond bark

Holiday Toffee

This stuff is amazing. I dream about it as Christmas approaches. Seriously, I made a batch Sunday and now I am sitting here at my computer eating some and I just had to post it. This recipe is so easy and delicious! It is also perfect for putting in little bags tied with ribbon for gifts! It makes a LOT as written, but can be halved easily. Just ignore how much butter and sugar are in it...it is worth it! And hey, it IS Christmas after all!

Ingredients:

2 boxes Crispix cereal
2 cups melted butter
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon salt

Directions:

Preheat oven to 250 degrees.

Spray 2 large baking sheets with Pam and fill with cereal, set aside. Melt butter in a medium size sauce pan over medium heat. Add brown sugar, corn syrup, and salt. Bring to a boil, stirring frequently. Boil for 5 minutes. Remove from heat and add vanilla and baking soda. It will start to bubble and expand a little.

Pour liquid evenly over cereal, don't mix. be very careful, it is hot! Place pans in preheated oven. Bake for 1 hour, stirring every 15 minutes. Remove from oven and cool.

You can also try fun variations like adding nuts of your choice, or chocolate chips the last 15 minutes. Enjoy!

Oreo Balls

Ingredients:
1 package regular size Oreo cookies, crushed
1 (8 ounce) package cream cheese, softened
1 package white almond bark
1 package chocolate almond bark

Using a blender or hand held mixer, mix Oreos and cream cheese together. Roll into walnut size balls. Chill for an hour.

Melt approximately 3/4 package of white almond bark. Stick a toothpick in an Oreo ball and dip it in the melted white almond bark. Allow to harden on wax paper. While waiting, melt about 1/4 package of chocolate almond bark. When Oreo balls are no longer sticky to the touch, decorate with drizzles of chocolate and white almond bark.
